Seafood Platter with Lemon & Black Pepper mi Butter

A generous platter of fresh seafood, simply seasoned with mi Salt – Thyme Sea Salt and finished with a bright, buttery lemon and black pepper sauce. The seafood is cooked until tender and succulent, then generously drizzled with the warm mi butter sauce for a rich, zesty finish.
Ingredients
For the seafood platter
500 g prawns, cleaned and deveined
500 g calamari, cleaned and sliced
500 g mussels, cleaned
500 g firm white fish, cut into large pieces
2 tbsp olive oil
1–2 tsp mi Salt – Thyme Sea Salt
Freshly ground black pepper
1 lemon, cut into wedges
Fresh parsley, to finish
For the Lemon & Black Pepper mi butter Sauce
4 tbsp Lemon & Black Pepper mi butter
Juice of 1 large lemon
½ tsp freshly cracked black pepper
2 tbsp seafood cooking juices or water
Fresh parsley, finely chopped

Preparation
Season the seafood with mi Salt – Thyme Sea Salt, black pepper and a drizzle of olive oil.
Cook the seafood in batches so it browns nicely without overcrowding the pan. Cook the prawns until pink and cooked through, the calamari until just tender, the fish until golden and flaky, and the mussels until they open. Discard any mussels that remain closed.
Make the sauce. Lower the heat and add the Lemon & Black Pepper mi butter to the same pan. Add the lemon juice, cracked black pepper and a little seafood cooking juice or water.
Let it melt gently, stirring until the mi butter becomes a glossy, fragrant sauce. Don’t let it boil aggressively.
Build your platter. Arrange the seafood generously on a large serving platter. Spoon the warm lemon and black pepper mi butter sauce over the seafood.
Finish with fresh parsley, lemon wedges and an extra crack of black pepper.
Serve immediately with warm crusty bread, crispy potatoes or a fresh seasonal salad.
