Creamy Garlic Herb Mussels

Fresh mussels, creamy garlic, fragrant herbs and mi butter come together in this beautifully simple dish. Quick to prepare but full of flavour, the mussels are gently cooked until tender and finished in a rich, velvety sauce. Serve with warm crusty bread for soaking up every last drop.
Ingredients
1 kg fresh mussels, cleaned
2 tbsp olive oil
4 garlic cloves, finely chopped
1 small shallot, finely diced
125 ml dry white wine (or seafood stock)
2 tbsp fresh cream (optional)
2 tbsp mi butter Sea Salt and Black Pepper
Fresh parsley, finely chopped
Freshly cracked black pepper
Lemon wedges to serve
Preparation
1. Heat the olive oil in a large pan and gently sauté the garlic and shallot until fragrant.
2. Add the white wine (or seafood stock) and bring to a gentle simmer.
3. Add the mussels, cover and cook for 4–5 minutes until they open.
4. Stir in the mi butter and allow it to melt into the sauce.
5. Add the cream if using and season with freshly cracked black pepper.
6. Finish with a generous sprinkle of fresh parsley. Pure indulgence.
7. Serve immediately with warm crusty bread to soak up every last drop of the buttery sauce.
